Where to Eat in Canada 1984/85

The editors of this guide have always been skeptical of the more formal, and expensive, sort of restaurant in Calgary. There was the Owl’s Nest in the Calgary Inn and after its demise came La Chaumière. But La Chaumière has now become, in it’s old age, little more than a safe place for the rich. L’Orangerie has different virtues and different vices. One can admire nouvelle cuisine and still have reservations about fillet mignon with goose liver, grapes and walnuts and terrine of sweetbreads with kiwi. The marinated raw salmon, on the other hand, is delicately bathed in white wine and lemon juice, and the veal skillfully flavoured with pernod and cream. The vegetables are usually underdone, the fish often overdone, but the appointments have everything, except fresh flowers, that one could desire.
